Michelle is a native of Saskatchewan and has been fishing the province's lakes since she was very young. During the warmer summer months, she and her husband, Dean, pack up the children and head off to beautiful Deifenbaker Lake for a weekend of camping. Here's one of Michelle's camp favorites.
Serves: 6 to 8 Cooking Time: 30 to 60 minutes | 2 | lbs. ground beef | | 2 | large onions, cut into pieces | | 4 | potatoes, cut into chunks | | 1 | lb. baby carrots (or cut whole carrots) | | Salt and pepper |
For Cooking Over Coals: Prepare campfire or grill. Tear off 6 to 8 large pieces of heavy-duty aluminum foil. Roll ground beef into small balls and divide evenly between pieces of foil. Add onions, potatoes and carrots; sprinkle with salt and pepper to taste. Wrap packets by bringing together the longer sides of the foil and folding the edges together down toward the center (make at least 2 folds); then roll-fold ends in tightly, making 2 or 3 folds. Place on grate over fire. Cook for about 30 minutes, turning occasionally; depending upon the fire, they may need a bit more or less cooking time. |
